Cars Mater-National is easy enough to get a thousand points, but what makes it even uber easy, is that there are cheats that do not affect achievements. Enter the cheats and you win every race, period.
What is time consuming is the amount of races that need doing, the amount of mini-games and of course, there are collectibles to discover. They are not too bad to find, except for one I found annoying.
For the last achievement, you need to WIN very race in the game. There are times when you can get by without winning and the story will progress, but you will not unlock the last achievement, "Beat The Game" With the cheats however, it is virtually impossible to lose races, except for maybe some of the truck races, because they rely on manoeuvring the truck right around corners. If you are losing, restart the race.
At the end of the story races, the credits roll before the final race. Don't worry, just skip the credits and then win the last race. You can go back after and do anything you might have missed.

ACHIEVEMENT GUIDE
Stick it to McQueen - 25 points
Beat the three Radiator Springs road races and the Relay Race, then place in the first Stadium Race
These races are marked with a white star on your map. Completing these races will unlock Ornamental Valley map. You do not have to win in the last race, but it is best to win if you want to unlock the last achievement.
Using the cheats above make it impossible to lose, and it is better to get in the habit of winning every race you enter.
Rust Bust - 75 points
Qualify in the first three Rustbucket Series races, then win the final
These races are in Ornamental Valley and you will be using Mater, the truck. Make sure you win every race or you will not get the last achievement.
Golden Gas Can - 75 points
Win each of the nine levels of Fillmore's Fuel Frenzy
There are nine of these races spread out across three maps. You have to collect gas cans during the race or you will run out of fuel. Trick here is not to rush and collect as many small cans and not to go out of your way for the big ones.
The race continues after you have finished, but make sure you see the message "You Won" before continuing.
Frank Slash - 75 points
Tip all tractors before the time limit in each of the six levels of Tractor Tipping
There are six levels of this mini-game. You play Mater again, and you have tip over the tractors before time runs out and not be spotted by Frank or the spotlights. Press "A" to tip over the tractors.
High Draulics - 75 points
Score well playing along with each of the seven songs in Ramone's Rhythmic Rumble
If your any good at Guitar Hero or Rock Band, then this should be a breeze. Just follow the notes and press the buttons on screen in time. There are seven levels and I found that it was quite forgiving if you do a few bum notes.
Ghost Light - 100 points
Scare Mater home in each of the seven Ghosting Mater levels
This was annoying, but I found an easy cheat. In these seven races you have to click right to go left and click left to go right, while reaching checkpoints to gain power.
The easiest way I found was to turn your controller upside down. That way when you click left, you actually go left and it feels more natural.
James P. Sullivan Cup - 75 points
Qualify in the first two Waypoint Race Series races, then finish in the top three of the final
These three races you race in the Monster Mater trucks. These can be annoying to handle and they move real slow. Give yourself plenty of time and the other trucks will not touch you with the cheats on. Make sure you win every race or the last achievement will not unlock.
Race 'n' Chase Victor - 75 points
Tag your opponent then zoom to your goal without being tagged in all nine Race 'n' Chase levels
There are nine of these races. You have to tag your opponent then race to the target location shown by a big arrow on the screen.
When you start the race, quickly tag your opponent, then hit LB to do a 180 degree turn, because the target location is always in the opposite direction, and race towards the target location. With the cheats on, you should get there easy. If you get tagged back by your opponent during this time, it may be easier start the race again.
Unlock Tailfin Pass - 25 points
Beat the three Ornament Valley road races and the Relay Race, then place in the second Stadium race
These races are marked with a white star on your map. Completing these races will unlock Ornamental Valley map. You do not have to win in the second race, but it is best to win if you want to unlock the last achievement.
Find all Paintjobs - 25 points
Find all 8 new paintjobs for Lightning McQueen
These are marked by a big spray can. See "Monster Mater" achievement below for the maps.
Find all wheel sets - 35 points
Find all 8 new wheel sets for Lightning McQueen
These are marked by a big tire. See "Monster Mater" achievement below for the maps. These are not hard to find, except there is one annoying one on top of a ledge and marked on the map next to a red arrow on the Tailfin Pass map.
You can see it if you drive in from the east, and look above the tunnel entrance, as shown in the picture below. To reach it, you have to drive in the opposite direction up a ramp inside the tunnel and jump to the ledge.
This is how I did it. Make sure you are top speed before you reach the ramp, hit boost (RT) halfway up, then jump (pull back LS then flick forward) at the top of the ramp.
Build Monster McQueen - 25 points
Find two monster truck pieces, plus a new horn, so Luigi can build Monster McQueen
See Monster Mater achievement below for the maps. Please note that these parts do not appear straight away. You have to play the game a bit before they appear.
Build Monster Mater - 40 points
Find six monster truck parts in Radiator Springs so Luigi can build Monster Mater

Win all Stadium Races - 50 points
Finish first in all four races conducted in Lightning McQueen's new Racing Stadium
Win all the races in McQueens Stadium. After the third race, the credits will roll. Just skip the credits and you will be taken back to the game and you can start the final race. If you not unlocked "Beat The Game" achievement after the race, you may have missed an collectible or race, in which case you can go back and do them now.
Win all Road Races - 75 points
Radiator Springs, Ornament Valley, and Tailfin Pass -- win all three races in each area
These are the major story races on each map. There are three on each map.
Beat the game! - 150 points
Collect every Bolt Banner and earn every sticker in the game
To get this you must be first in every race, and win every mini-game. This will get you the maximum amount of Bolt Banners and stickers. You have not unlocked this at the end, make sure you have collected every collectible, completed every stage of a mini game or come first in every race.
